Hilton Manila’s Shanghainese restaurant, Hua Yuan–Brasserie Chinoise in collaboration with Wine Depot, is inviting foodies and wine enthusiasts on Oct. 23, Wednesday to an evening of great food paired with wines from Adelaide-based wine brand Shaw + Smith. The selection of wines will be paired with a five-course dinner menu crafted by resident chef Kevin Xu.

Guests can indulge in a feast of modern and refined Chinese specialties made from premium and locally-sourced ingredients. The gastronomic journey starts with signature delicacies such as drunken chicken served with wasabi-flavored black fungus and jellyfish; and cod fish with century egg soup paired with Shaw + Smith’s Sauvignon Blanc.

Sweet and sour yellow croaker with pine nuts

For the main course, Xu and his culinary team have prepared a trio of entrées: sweet and sour yellow croaker with pine nuts and wok-fried sea asparagus with celery and lily bulb paired with Shaw + Smith Chardonnay; braised pork belly “Hong Shao Rou” with eggs, stir-fried kalian and mushroom in oyster sauce paired with Shaw + Smith Pinot Noir; and braised beef short ribs with shanghai fried rice paired with Shaw + Smith Shiraz. The evening ends on a sweet note with a serving of coconut cream jelly with taro balls and peach gum.
