Tomatito’s newly appointed head chef updates menu
The Andalusia-Inspired tapas bar appoints Madrid-born Ivan Fernandez as its new head chef
Restaurateur Willy Trullas Moreno fused world-class Spanish culture and cuisine when he launched the tapas bar Tomatito almost three years ago. Tomatito was originally based in Shanghai under the El Willy Fun F&B Group (headed by Moreno) in affiliation with Bistronomia, the company behind Rambla, Las Flores, and La Lola Chureria.
The word “Tomatito” was the nickname of an iconic Spanish Flamenco guitarist, Jose Fernandez Torres; it’s also a Spanish term for “little tomatoes.” It’s a name fit for the tapas bar, which, just this month introduced new dishes and appointed a new head chef, Ivan Fernandez.
“The restaurant and its cuisine were influenced by traditional Spanish tapas bars found in Andalucia, where people get together, eat tapas, have wine, and listen to great music,” said Fernandez, who worked as a sous chef in Tomatito Shanghai for over nine years.
The Madrid-born 30-year-old chef added the following dishes to Tomatito’s menu: ensalada de burrata (burrata salad with cherry tomatoes, mushroom, crispy onion, Iberian Ham and coffee vinaigrette), escalivada con carpaccio (roasted eggplant and red bell peppers with tanigue carpaccio, feta cheese, piparra (Basque pickled green chili), toasted almonds and calamansi), parillada de verduras (a medley of roasted vegetables glazed with a balsamic reduction and tarragon), pork belly and pineapple tostadas con romesco (crispy corn tostadas with pork belly, pineapple pico de gallo and romesco sauce), paella del Txiringuito (seafood paella topped with clams, mussels and prawns), and mini hamburguesas de salmon y gamba (mini fish and prawn burgers in homemade black bun with baby potato chips).
Fernandez also plans to introduce new items every month, including chef specials such as crema de queso con manzana verde (liquid cheese cake with green apple compote and cinnamon crumble), paella de mole Mexicano (chicken paella cooked in traditional Mexican Mole) and pulpo a la gallega con aioli (traditional Spanish octopus with marble potato, pimentón, extra virgin olive oil, sea salt and aioli).
